Another recipe for the Christmas Cookie Recipe Exchange has come in via e-mail.
It’s but one example of the garden of sugary delights that make the annual cookie exchange at the Pastoral Center so tempting.
Frances Koukotas, of the diocesan Office of Youth Ministry, sent in the recipe and shared her insights about how the cookie exchange got started.
“There are many bakers here in the Pastoral Center,” she wrote. “In an attempt to harness some of their expertise, we began a small cookie exchange in 2005.
“Word seemed to get around about the cookie exchange and what was going to be about eight people exchanging their special cookies became 17 people! It was a lot of fun. As we begin our 5th cookie exchange, we have about 16 people participating with a wonderful assortment of cookies.”
This is one of the recipes from the Diocese of Trenton’s annual Christmas cookie exchange.
Walnut Cups Cookies
Ingredients: 1 cup butter; 8 oz. cream cheese; 1/2 tsp. salt; 2 cups flour
Beat the butter and cream cheese until one color – add flour and salt and then shape into 1/2 ” size balls (the size of a walnut) and refrigerate.
Filling: 2 eggs; 1 1/2 cups brown sugar; 2 tbsp. butter, melted; 1 1/2 cups walnut nuts; 1 1/2 tsp. vanilla extract.
Beat the eggs, sugar & melted butter together and then add nuts and vanilla. In mini cupcake pans, press balls to form a cup and fill each cup one half to three quarters of the way with filling. Bake at 350 degrees for 20 minutes or until the edges are light brown.
