Lent is a wonderful time to pray the Rosary. There are many ways to work the Rosary into your Lenten observance:
– Try to gather as a family each night and recite the Rosary. Many adults remember such devotions fondly, recalling the nights they knelt in prayer with their own parents, brothers and sisters and perhaps even grandparents and aunts and uncles.
– Bring rosaries to your Church as a family and have them blessed by a priest.
– Plan a special meal and set the table with your best dishes and a centerpiece of roses, the flower of the Blessed Mother. This recipe is taken from October’s observance of the Month of the Rosary, but it also works perfectly during Lent!
Zuppa di Pesce (From the recipe files of Chef Anthony Sirianni)
– 1 lb. calamari
– 1 lb. cod
– 12 clams
– 12 mussels
– 12 shrimp
– 1 lobster tail
– ½ cup oil
– 1 tbsp. chopped onion
– 3 cloves garlic, crushed
– ½ bay leaf
– 2 tsp. chopped parsley
– 4 tomatoes, peeled, seeded, drained and chopped
–salt and black pepper to taste
Cut calamari and cod into strips of 2 inches and set aside. Heat the oil in a large skillet and then add onions and garlic and cook until golden. Add parsley and tomatoes, salt and pepper and bring to a boil. Then add all the seafood, cover the pot and cook for 15 minutes.
Serve over pasta that has been cooked separately. Serves 6
